Ingredients:

Eggs:
1/4 cup Chopped green onion
3 TBS butter
12 beaten eggs
1 (3 oz) can mushrooms, drained
Cheese Sauce:
2 TBS melted butter
2 TBS flour
1/2 Tsp Salt
1/8 Tsp pepper
2 cups milk
1 cup shredded mild/medium cheddar cheese
Topping:
4 TBS butter, melted
2 1/4 cups stuffing
1/8 Tsp paprika

Directions:

Cook onions in 3 Tbs butter until
tender. Add eggs and scramble until just set.
Make cheese sauce: Melt butter, blend in flour, salt and pepper. Add
milk & stir until bubbly. Stir in cheese and cook until melted.
Fold mushrooms and cheese sauce into egg mixture. Pour into a 12 x 7
x 2 baking dish.
Make topping and spread over top. Cover and chill 30 minutes.
Bake uncovered at 350 for 30 minutes.
